Preheat oven to 350° Peel and slice potatoes, I carefully used a mandolin. Rinse potatoes, then dry on paper towels.
In an oven safe pan melt butter and add garlic. Heat until fragrant. Add cream, stir to combine. Warm to soft bubble, but not a boil. Add salt and pepper. Add 3/4 of the grated cheese stir to melt.
Add sliced potatoes one by one into cream/cheese mixture. Add remainder of the cheese to the top. Bake for 30-45 minutes, or until golden brown.
Note: you can use whatever cheese you would like. I’ve use a Gouda, blue cheese, or a mixture of mild cheese and Parmesan, just to name a few.
When slicing the potatoes, if you have a mandolin, set the blade to the second thickness and please be careful.
