Using a whole chicken, break it down by cutting the thighs and legs off. The trim off the backbone and wing tip and flats. Leaving the two breasts. Carefully trim off the breast bone, wish bone and disconnect from the wings, leaving the drummette.

Season the breast with salt, pepper and paprika. Allow to rest to room temp.

Warm up the smoker to 325°. Place the chicken breast on the smoker and cook to 167°. Pull off heat and wrap in foil. Allow to rest about 5 minutes.
