We’ve all had hummingbird cake, that deceptively light and heavy cake, all at the same time. It’s the spice cake based on Bananas and pineapple, that originated in Jamaica in the 60-70’s. Why not make this great cake into a quickbread? This Hummingbird Zucchini Bread, I added coconut and used macadamia nuts. It just seemed natural with the pineapple. Grab some soften high quality butter, spread it thick and enjoy!
