Print Options:

Zucchini, Rice, Turkey and Caramelized Onions

 1 cup Dry rice
 2 cups Water
 Salt
 2 tbsp Oil
 1 lb Ground turkeyYou can use ground beef or chicken
 1 Medium Zucchini Diced
 1 Medium onionDiced
 Salt and pepper To taste
 4 Cloves of garlicMinced
 Handful of Dill Chopped
 3 tbsp Chili Crisp(Optional)

Cook the rice as per the package instructions and set aside.

In a skillet add the oil, and let it heat up. Add the ground meat of choice with a generous pinch of salt and break it up as you stir for 8-10 min or until golden.

Reduce the heat to medium and add the onions and zucchini and stir for 1 to 2 minutes. Stir in the garlic and take it off the heat.

Stir in the fresh dill and add in the cooked rice. Gently mix it all together and enjoy

You can skip making fresh rice and use leftover rice from last night dinner or take out. This works VERY well.

Adding the chili crisp seasoning will add the right amount of heat to this quick and easy dish.
