Print Options:

Spinach, Peppers, Chicken Sausage & Feta Pasta

 2 tbsp Olive oil
 3 Links of chicken sausage (I used field roast Italian sausage!)
 1 cup OnionDiced
 2 Cloves of garlicMinced
 8 oz Tomato sauce
 1 Large bell pepperChopped
 4 cups Baby Spinach
 16 oz Cooked large pastaYour favorite shape
 ½ cup KalamataSliced
 ½ cup FetaCrumbled
 ½ cup BasilThinly sliced

Heat oil in a large straight-sided skillet over medium-high heat. Add sausage, onion and garlic; cook, stirring often, until the onion starts to brown, 4 to 6 minutes.

Add tomato sauce, spinach, pasta and olives; cook, stirring often, until bubbling hot and the spinach is wilted, 3 to 5 minutes.

Add 1 to 2 tablespoons water, if necessary, to keep the pasta from sticking. Stir in feta and, if desired, basil.
