Smashed Gyro

 1 lb boneless, skinless chicken thighs
 2 tbsp Olive oil
 1 tsp Salt and pepper
 2 tbsp Dried oregano
 2 tsp Shawarma seasoning
 1 Juice of one lemon
 2 tbsp Neutral oil
For serving
 Prepared flat bread
 CucumberThinly sliced
 Tomato Thinly sliced
 Red onionThinly sliced
 Tzatziki

Place chicken thighs in the bowl of a food processor, add oil, seasoning and lemon juice.

Place lid on bowl and Pulse until finely ground.

Spread seasoned ground chicken thinly on flat bread. Chill for 1 hour.

4. Heat up flattop grill, or griddle (medium heat). Place oil on griddle. Once heated, place flatbreads, chicken side down and allow to brown. Once the chicken side is browned, flip flat bread over and toast bread.

Remove from grill, top gyro with Tzatziki, cucumber, tomatoes and red onion. Fold in half. Serve with a Greek salad. (I made a chopped Greek tomato salad)
