
Preheat oven to 375°F Gather ingredients. Spray a muffin tin with cooking spray. You can use paper liners as well, but spray them after you put In the pan.
Combine the flour, baking powder, baking soda, garlic powder, black pepper, chives and salt into a bowl. Make a well in the center of the flour.
In another bowl, whisk together sugar, egg, butter and mustard until well blended, then whisk in buttermilk.

Add the egg mixture to the well and stir until just blended. Do not over mix. Gently fold in cheese and ham. Spoon mixture evenly, into the prepared muffin pan.

Bake 25 minutes or until golden and a toothpick inserted in the center comes out clean
You can make this without the ham if you like. Or add in any style cheese, or spice.
If you don’t have buttermilk, take 1 cup of milk or cream and add in 1 Tbsp lemon juice or vinegar. Let sit for a few minutes and you’ll have buttermilk.
