Pineapple & Cucumber Salsa

 2 medium tomatoes, seeded and cut into 1/4-inch dice
 2 jalapeño peppers, stemmed, seeded and minced
 2 cloves garlic, minced
 1 small red onion, cut into ¼ -inch dice
 1 cup 1/4-inch diced fresh pineapple,
 1 cup peeled cucumber
 1 cup bell pepper (any colors)
 ¼ cup chopped fresh cilantro
 Juice of 2 limes
 Salt and pepper to taste

Stir together all ingredients in a medium bowl. Let stand for at least 30 minutes for flavors to mingle.
Makes about 3 cups.
