Cold Sesame Noodles

 12 oz Package fresh thin noodlesFrom an Asian market
 3 tbsp Low sodium soy sauce
 ½ tsp Toasted Sesame oil
 2 tbsp Rice wine vinegar
 1 tsp Ground ginger
 3 Garlic clovesMinced
 1 tbsp Toasted sesame seeds
 1 Large carrot Finely grated
 2 Stalks of celeryDiagonally thinly sliced
 3 Green onionThinly sliced

Cook noodles according to package directions. Drain and run under cool water. Let drain again.

While noodles are cooking whisk together soy sauce, sesame oil, vinegar, ginger, garlic and sesame seeds in a large bowl.

Place cooled noodles into bowl. (If you are not serving right away, allow the noodles to “soak” in the soy/sesame mixture for at least an hour.) When ready to serve, add in carrots, celery and diced green onion. Toss to coat. Serve.
